   The older wine is always better!

   We have probably heard this opinion many times, but in reality everything is different.

    This topic is much deeper and more interesting than it seems at first glance. Wine aging, aging potential, wine life cycle, etc. These are the terms we often hear most about aging.

   When we talk about wine aging, we must realize that the term "aging" in this case is not only associated with time, and it mainly refers to the maturation of wine.

    Wine is a living thing. Consequently, its aging potential, depends on its characteristics and composition, like a tannins, acidity, alcohol.

    The length of the life cycle is also naturally different and that is why not all wines can withstand time. Less bodyed, thin, light, low-alcohol, low-acid wines should be drunk soon.

    Wines which ones is for aging should be distinguished by their body structure, extraction, relatively high levels of tannins, phenolic compounds, acidity and alcohol. The life span of such wines is quite high and under the right maturation conditions, the aromatic range will inevitably develop and be enriched. Taste properties will also change. It will be more balanced, harmonious and refined.

    It is also interesting to change the color gamut associated with development. If white wines fade and go from light straw to dark straw or amber, in the case of red wines, the fresh purple and sometimes bluish hue will fade to a pale brick color and become stronger over time.

     One of the essential conditions for wine aging is to choose the right place. Such a place should be provided with a stable temperature and adequate humidity. It should also be protected from light.

   With all this in mind, naturally, wine cannot be properly aged on store shelves or on kitchen shelves. Such shelves should be emptied of old wines as soon as possible and filled with new ones.

  Among the old wines of Mildiani, Kisi Qvevri and Saperavi reserve of 2011 vintage are noteworthy. Also Kisi and Saperavi Qvevri 2012-2013 harvest. Mildiani Qvevri wines, Alexandrouli, Otskhanuri Sapere, Khikhvi, Rkatsiteli, Saperavi and others are distinguished by high aging potential.
